Peach and ginger compote
In this unique compote, fresh peaches are tossed with preserves, wine, and aromatic spices, then roasted until the juices thicken. A scoop of low-fat ice cream or yogurt makes the perfect accompaniment.

Gathering ingredients
- 5 large just-ripe peaches (about 350 g or 12 oz)
- 125 g (4.5 oz) apricot preserves
- 125 mL (1/2 c) white wine or vermouth
- 30 mL (2 tbsp) honey
- 30 mL (2 tbsp) unsalted butter, cut into
- 8 equal pieces
- 5 g (1 tsp) grated fresh ginger
- 5 g (1 tsp) grated orange zest
- 5 g (1 tsp) grated lemon zest
- 1 g (1/4 tsp) ground cinnamon
- 1 g (1/4 tsp) ground ginger
- 25 g (1 oz) sliced almonds
Getting started
1. Set a rack in the middle level of the oven and preheat to 190°C (375°F). Coat a 20 by 23 centimetre (8 by 9 inch) baking dish with cooking spray.
2. Drop the peaches into a large pot of boiling water until the skins are loose, about 30 to 45 seconds. Transfer to a bowl of ice water and slip the skins off the peaches. Cut in half and remove then pits, then cut each peach into eight wedges, and set aside.
3. Stir together the preserves, wine, and honey in a large mixing bowl. Stir in the butter, fresh ginger, orange zest, lemon zest, cinnamon, and ground ginger.
4. Gently fold the peaches into the preserve mixture until they are evenly coated. Scrape the mixture into the prepared baking dish and scatter the almonds on top.
5. Bake the compote until the peaches are tender and the juices have reduced and thickened slightly, 45 to 50 minutes. Use a wide metal spatula to move the compote around and to scrape the sides of the pan clean several times during baking. Be gentle or the peach wedges will break apart.
6. Cool the compote in the pan on a rack. Serve warm or at room temperature. Cover and refrigerate for up to four days; return to room temperature before serving.
